This morning our family was in the mood for some waffles. We had AdvoCare Pumpkin Pancakes (1 pack Meal Replacement of choice, 1 egg, 1 t Baking Powder, 1 T syrup: We use Waldenfarms) yesterday & I wanted to find a good Waffle recipe that did not have flour.
Ingredients:
3 Cups Oats (or 2 1/2 Cups Oat Flour)
2 Eggs (Beaten Before)
1 1/2 Cup Milk (we used Almond)
2 T Honey (we used a little less)
2 T Oil (We used Olive)
2 T Unsweetened Applesauce
2 T Baking Powder
1/2 t Salt (We used Sea Salt)
1. Add oats to a blender or food processor and blend until oats are very smooth.
2. In a bowl, beat eggs and then add other ingredients.
3. Drop onto a hot skillet or pour into a waffle iron (we used waffles and the did not get “crunchy” like some like waffles to be. If this is something you like I would stick to the pancakes!)

We LOVED the taste. Top with Waldenfarms syrup, honey, whipped cream, fruit (add fruit to the microwave for a few seconds & it will make a “sauce”), peanut butter, etc.
