Summer Snacks

Summer is one of the busiest times of the year (other than the Holidays of course) and that leads to unhealthy snacking if we don’t make plans at our house!!! I wanted to share a few quick, easy and healthy snacks we “go-to” in the summer.

 

Hummus & Veggies or Pretzels- Hummus can be store bought or homemade.  We love homemade hummus but with a new baby in the house we have been eating store bought lately.  We enjoy eating hummus with carrots, cherry tomatoes, pretzels and sliced peppers!

Banana Peanut Butter Wrap- Use a whole wheat wrap, spread peanut butter on it, add a banana, and wrap it up!  (Sometimes I also add unsweetened coconut.) You can take it on the go whole or slice it up for the kiddos!

Parfaits – These need to be made ahead of time for us or we will not eat them!  I buy Plain Greek Yogurt and put it into small tupperwear containers.  Then we add our favorite fruit to the top! If we use frozen (unsweetened) fruit then it creates juices when it thaws in the fridge.  A crunchy topping to use is a few pretzels or oats!

Trail Mix- This could be with a variety of snacks.  Make a big batch in a bowl and separate them into snack sized baggies! Some items we like to use are: Cheerios, almonds, peanuts, dark chocolate chips, sunflowers, dried fruit, raisins, etc!  My favorite mix currently is sunflower seeds & dried cranberries!  Another tip that I wanted to share is that I recommend eating unsalted nuts and unsweetened (extra) dried fruit.

Chicken Salad with Chips or Crackers- I eat a very simple and plain chicken salad.  I make a bunch of chicken (slow cook it on low) in olive oil with salt and pepper on the stove top.  Once the meat is cooled, I shred it, add it to a bowl and add a little Olive Oil Mayo to it.  There are many recipes on Pinterest but this is the simple recipe that we use!

“Ice Cream” Sandwiches- Use Chocolate Graham Crackers and Whipped Cream.  Break the crackers in halves or fourth (depending on the size you prefer) and add a little whipped cream to the middle.  Into ziplock baggies and then into the freezer.  We put them into small snack sized baggies so Lola can grab them easily!
